Thursday Dinner!

I actually made dinner tonight…amazing! So I decided I should post about it ( I need evidence for when my kids are older).

Sweet & Spicy Rosemary Focaccia Pizza


* Rosemary Focaccia Dough from Fresh and Easy

* Homemade pizzas sauce – I used 2 tomatoes (one pureed and one copped into small chunks), salt, pepper (six blend pepper fusion), 1 tbs mensed garlic, oregano, basil, parsley, olive oil brought to boil then put to lowest heat simmer for at least 1 hour. stir occasionally add flour to thicken.

Hamburger patty with jalapeño in it (I had 1 patty left over from the package that I bought @ Sam’s Club. they are pre-cooked so you only have to heat it up in the microwave and tare it into little pieces)

* Pineapple – small pieces

* Mexican Blend cheese – I buy mine pre-shredded

First pour yourself a glass of wine before getting started.  We had
Saludas 2009 Vino de la Tierra White (only $2). It was okay. A little too dry for my taste and the flavor was dull. It said it was good with pizza, but because of the spiciness in the meat, a white or red that is good with spicy might have been a better choice.

Preheat oven to 400 degrees F. Lightly over pizza stone with flour. roll out dough. add sauce then thin layer of cheese. add meat and pineapple then cover with cheese. bake for 12-14 minutes.

Wipe Case

My friend Soo just had her second boy a few weeks ago! I am so excited for her…having two boys is AWESOME. A little exhausting at times, but I love it!

She’s my first friend to have a baby since I’ve started the ECO-CHIC line. I had a lot of fun with this project. The burp cloths are made from 100% bamboo yarn – soft, light weight and breathable, dries quickly, hypoallergenic, antimicrobial, organic!!! I can’t wait to make more!

When I was pregnant with my 2nd “little guy” (who is not so little…we call him Moo-moo), a friend of mine told me how she found this free pattern for breastfeeding covers online!

I was really wanting one, but was having a difficult time with the idea of a piece of material costing $30+. So, embarked on my cover-making-extravaganza! I made 3 in one evening; gave 2 away as gifts and one for myself.

After using mine for the past 7 months now, there were some things that i felt were lacking from the pattern that I found, and I wanted to share my new found ideas with others…hope you find them helpful.

I use a lot of pics to help illustrate because that’s what I find most helpful for me – ENJOY!


* 1 yard Fabric (for a great selection check out M&L fabrics)

* D ring – I used 1 1/4 inch

* Corset Boning. You need 1/2 yard @ ~1/4 inch wide and most stiff (wow, that got dirty fast!)

* Thread

* Iron and ironing board (optional, but it makes things so much easier sew)

* Snaps and attacker
